This is probably a Duh! sort of question, but since you are in the U.K. does it matter if I am in the U.S. and decide to choose you for web-hosting?

No, it does not matter that you live in the U.S., however when you pay for your hosting the price will still be in GBP. It won't be a problem at all, though, all of that conversion stuff gets taken care of automatically! Also we have U.S. based staff (including me) so getting support won't be a problem! I hope we have you as a customer soon! ;)
