Two questions:

1) Can I host a site that has a name other than www.whatever, eg. abc.example.com rather than www.example.com?

2) Do I have to use your nameservers? Or could I simply add

abc IN A <your-server's-IP>

to the domain file for example.com?

I have several subdomains setup as abc.example.com on my account and you can also use example.com instead of www.example.com. It is very easy to do from cpanel.

I did have to use nethosted nameservers but that might have been the easy way to do it. My domains are purchased elsewhere and were set to point to nethosted before the nameserver change. This isn't my area of expertise though.

As rhinoian has said you can host any kind of subdomain you wish on our servers.

You dont have to use our nameservers, you can use your existing ones and simply add the A/CNAME/MX records as you have stated.
